I found these strength and conditioning internship opportunities here: http://www.footballscoop.com/strength-scoop
The timing is not exactly right for this spring semester, but I want you to know such experiences exist. With some planning ahead, an internship like either of these would be a great experience:

This internship will provide the opportunity to gain experience in coaching, motivating athletes, and program design by working hands on in a Division 1 College Football Program. Responsibilities will include but are not limited to assisting with the supervision and training of the Cincinnati Bearcat Football Players while also assisting with assigned duties. The planned start date will be January 9 and will continue till the end of April. The deadline to apply is December 31, 2011. To apply please email a cover letter, resume, and 3 professional references to Michael Szerszen, Assistant Director of Football Strength and Conditioning at szerszml@ucmail.uc.edu
